Ahh, how I love the fall season. Nature is full of magnificent colors, the weather is perfect, and farmers' markets are full of delicious locally-grown fruits and veggies.

Especially fresh, crispy, and juicy apples. They are one of my favorite seasonal fruits. Highly nutritious and super affordable.

There are so many reasons to praise and be thankful to our GOD for all the blessings He gives us!

Truly, autumn is the ideal time of the year to prepare lovely comforting recipes.

From cozy apple cinnamon cake, and oatmeal apple cookies, to refreshing apple walnut salad and homemade applesauce without added sugar these apple recipes are a wonderful way to use up and truly enjoy fresh apples.

    Ingredients

You will need a few simple pantry staples you probably already have on hand to whip up this apple cinnamon smoothie:

    • Sweet apple (use your favorite variety)
    • Rolled/Old fashioned oats
    • Peanut butter (unsweetened). Here is how to make homemade peanut butter from scratch.
    • Dates
    • Chia seeds
    • Plant-based milk (I used homemade oat milk)
    • Raw walnuts
    • Ground cinnamon

As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.

How To Make Apple Peanut Butter Smoothie

    1. Process oats and walnuts. Start by processing rolled oats and walnuts for a few seconds. If you use a high-powered blender you can skip this step.
    2. Blend. Then add oat milk, diced apple (don't peel it, to get the best out of the apple), peanut butter, pitted dates, and ground cinnamon. Blend until you get a silky smooth consistency. Taste and add more dates if you desire.
You can add a handful of ice to make this apple smoothie extra cool and refreshing.
    3. Serve immediately and enjoy. Pour it out into a glass and serve it immediately. You can top it with homemade granola to make it even more wholesome. Enjoy!

    Substitutions

    • Apples - Replace one fresh apple with ½ cup applesauce.
    • Rolled oats - you can use quick oats, as well. Don't use steel-cut oats for this recipe.
    • Peanut butter - Blend in cashew butter, almond butter, or sunflower seeds butter instead. You can even add a tablespoon of homemade Nutella for a rich chocolate hazelnut flavor.
    • Dates - substitute them with pure maple syrup, agave nectar, date syrup, or liquid stevia.
    • Chia seeds - use flaxseed, hemp seeds, or pumpkin seeds instead of chia seeds.
    • Oat milk - Any type of dairy-free milk like cashew milk, almond milk, or soy milk works here.
    • Walnuts - pecans, almonds, or cashews are great alternatives.

    Variations

    • Protein boost - Blend in a scoop of vegan protein powder to make it a satisfying apple peanut butter protein shake you can enjoy after intense workout sessions.
    • Gluten-free - If you are gluten intolerant or have celiac disease check the label of your oats to ensure they are certified gluten-free.
    • Chocolate peanut butter smoothie - mix in 1 teaspoon of unsweetened cacao for a decadent chocolatey taste.
    • Add vegan Greek yogurt - for a velvety smooth texture and extra protein.
    • Add more warm spiciness - a pinch of ground nutmeg, cloves, ginger, or cardamom will add a nice touch of warmth and sweetness.

    Equipment

You need a high-speed blender or food processor to make this smoothie recipe.

    Storage

My recommendation is to enjoy this smoothie as soon as you make it for maximum nutrition and taste.

If you have any leftovers store them in an airtight container in the fridge for up to 24 hours.

Since oats and chia seeds tend to make the smoothie consistency thick as it sits in the refrigerator make sure to add a bit of milk or water the next day. Shake before drinking.

    Top Tips

    • For a luscious & chilly smoothie consistency, you can use frozen apple slices. See the FAQ section below for how to freeze apples at home. Alternatively, add a few ice cubes to chill it out.
    • If the smoothie is too thick add more milk or water.
    • If you love your smoothies on the sweeter side, feel free to add more dates or another sweetener of choice to make it suit your taste.
    • You can easily double or triple this smoothie to make more servings.
