🍏Ingredients

- Apple: Use your favorite variety. Any crisp, sweet apple will work beautifully.
- Chia seeds: Chia seeds naturally thicken the pudding. It's best to let them soak overnight, but they're good after 30 minutes if you're in a hurry.
- Peanut butter: Adds protein and makes the pudding more filling. Almond or cashew butter works well as an alternative.
- Dates: Soak them for a few minutes if they're dry to make blending easier and naturally sweeten the pudding.
- Cinnamon: Brings a warm, cozy flavor that pairs perfectly with apple.
- Plant-based milk: I used unsweetened almond milk, but any plant-based milk works, such as oat, coconut, or cashew milk.
As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.
🥄How To Make Apple Chia Pudding

Blend: In a high-speed blender, combine everything except the chia seeds until smooth and creamy.

Mix: Pour the blended mixture into a jar or bowl, add the chia seeds, and stir well until the seeds are fully incorporated and there are no lumps.

Chill & Serve: Refrigerate for at least 30 minutes (ideally overnight). Before serving, top with apple slices, a drizzle of peanut butter, and a sprinkle of chopped walnuts.
📋Variations
- Protein boost: Add a scoop of vegan protein powder to make it extra filling.
- Peanut butter alternative: Almond or cashew butter works too, or use tahini for a nut-free version.
- Dates swap: Replace with pure maple syrup or agave for natural sweetness.
- Spices: Mix in nutmeg, allspice, or pumpkin pie spice for extra warmth.

💡Marinela's Tip
Not a fan of the little seed texture? Just blend the chia with the rest of the ingredients for a silky smooth version.
