    These healthy lemon balls are made in a snap with just a few wholesome pantry staples and minimal effort. All you need is:

    Ingredients for making no-bake bliss balls: desiccated coconut flakes, raw cashews, coconut flour, milk, oil, maple syrup,  fresh lemon juice, pure vanilla extract, and turmeric powder on blue wooden table.

    • Dry desiccated coconut flakes
    • Coconut flour
    • Coconut milk
    • Coconut oil
    • Freshly squeezed lemon juice
    • Pure maple syrup
    • Pure vanilla extract
    • Turmeric powder (for color)

    Instructions

    Here is an easy step-by-step instruction on how to make these sugar-free coconut lemon bliss balls.

    Process cashews. First, put raw cashews in a food processor and blitz them a few times until they are ground into a fine meal. Don't over-process, you don't want to make cashew butter here.

    Blend everything together. Add in desiccated coconut flakes, coconut flour, milk, oil, maple syrup, lemon juice, vanilla extract, and turmeric powder. Blend until you get a sticky mixture that you can easily roll into balls.

    These lemon balls are quite citrusy and not overly sweet. I recommend tasting and adjusting the sweetness to your liking before forming the balls.

    Roll into balls. With clean hands, form small balls (about one tablespoon of mixture). If the mixture is too crumbly and is not coming together add another spoonful of coconut milk.

    Coat each ball with desiccated coconut. Store in an airtight container in one layer in the fridge for up to 7 days.

    Substitutions

    • Coconut flour- instead of coconut flour you can use oat flour or almond flour.
    • Maple syrup - you can substitute with agave nectar or brown rice syrup.
    • Coconut milk - almond milk, oat milk, or cashew milk would be a great alternative. Since full-fat coconut milk has a thicker texture you may need to add more coconut flour or desiccated coconut flakes to achieve the desired texture for the dough.
    • Cashews - you can substitute with roasted hazelnuts or almonds. For a nut-free version, you can try sunflower seeds but keep in mind that the flavor will differ slightly.
    • Lemon - you can use lime instead of lemon.

    Storage

    These vegan bliss balls are best stored in the fridge in an airtight container for up to 7 days. Also, you can keep them in a freezer-friendly container in the freezer for up to 3 months.

    Top tips

    • If the mixture is too dry and crumbly add 1-2 tablespoons of milk or maple syrup (if you like them to be on the sweeter side) to achieve a dough that holds together when squeezed into a ball. Alternatively, if the mixture is too wet add more coconut flakes.
    • Before rolling, place the bowl with the dough in the refrigerator for 30 minutes to set and make the balls easier to roll.
    • If you like a more subtle lemon flavor use 1 tablespoon of lemon juice instead of 2 tablespoons. For a stronger lemon taste add finely grated lemon zest.
