Vegan Lemon Coconut Bliss Balls

Vegan lemon coconut bliss balls are easy, healthy, no-bake snacks ready in 10 minutes. These melt-in-your-mouth treats are dairy-free, gluten-free, and refined sugar-free. No dates, no oats, and no sugar are required. Truly, these shiny lemon protein bites are simply the best!

Ingredients
  

  • ½ cup cashews raw, unsalted
  • ½ cup desiccated coconut flakes unsweetened (plus about ⅓ cup for coating)
  • ¼ cup coconut flour
  • 2 tablespoon lemon juice freshly squeezed
  • ¼ cup coconut milk
  • 3 tablespoon maple syrup
  • 1 tablespoon coconut oil softened
  • ½ teaspoon pure vanilla extract
  • ¼-½ teaspoon turmeric powder for color

Instructions
 

  • First, put raw cashews in a food processor and blitz them a few times until they are ground into a fine meal. Don't over-process, you don't want to make cashew butter here.
  • Add in desiccated coconut flakes, coconut flour, milk, oil, maple syrup, lemon juice, vanilla extract, and turmeric powder. Blend until you get a soft, sticky mixture that you can easily roll into balls.
    These lemon balls are quite citrusy and not overly sweet. I recommend tasting and adjusting the sweetness to your liking before forming the balls.
  • With clean hands, form small balls (about one tablespoon of mixture). If the mixture is too crumbly and is not coming together add another spoonful of coconut milk.
    Coat each ball with desiccated coconut. Store in an airtight container in one layer in the fridge for up to 7 days.

Notes

    • Coconut flour- instead of coconut flour you can use oat flour or almond flour.
    • Maple syrup - you can substitute with agave nectar or brown rice syrup.
    • Coconut milk - almond milk, oat milk, or cashew milk would be a great alternative. Since full-fat coconut milk has a thicker texture you may need to add more coconut flour or desiccated coconut flakes to achieve the desired texture for the dough.
    • Cashews - you can substitute with roasted hazelnuts or almonds. For a nut-free version, you can try sunflower seeds but keep in mind that the flavor will differ slightly.
    • Lemon - you can use lime instead of lemon.
    • To Freeze - keep them in a freezer-friendly container in the freezer for up to 3 months.
