    Ingredients

For this lazy cinnamon roll recipe, you'll need only 4 everyday ingredients:

Whole wheat flour tortillas, ground cinnamon, vegan cream cheese, and brown sugar.
    • Flour Tortillas - Opt for fresh, pliable tortillas to ensure easy rolling and a soft texture in your cinnamon rolls. I used whole wheat tortillas for a nutty flavor and extra fiber. Use gluten-free tortillas if needed.
    • Vegan Cream Cheese - Allow it to reach room temperature before using, ensuring a smooth and easy spread on the tortillas.
    • Brown Sugar - Granulated sugar and coconut sugar are great alternatives if you dont's have brown sugar at hand.
    • Cinnamon Powder (ground cinnamon)- Choose high-quality cinnamon for richer and more aromatic cinnamon rolls.

    Melted chocolate for drizzling (optional):

Dark chocolate and coconut oil for melted chocolate.
    • Dark Chocolate - Choose high-quality dark chocolate, chopped into small pieces for easy melting.
    • Coconut Oil - To achieve a smooth and glossy consistency in the melted chocolate.

As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.

Spread cream cheese. Start by taking one flour tortilla and spreading a layer of cream cheese on it (2 heaping tablespoons on each tortilla).

Sweet tortilla with ground cinnamon and brown sugar.

Add cinnamon and sugar. Sprinkle 1 teaspoon of brown sugar and ½ teaspoon of ground cinnamon over cream cheese spread.

Hands rolling sweet cinnamon sugar tortillas with cream cheese.

Repeat and stack. Place another tortilla on top and repeat the process with an even layer of cream cheese, sugar, and cinnamon.

Roll and slice. Roll stacked tortillas tightly into a log shape then slice them into pinwheels approximately 1.2 inches (3 cm) thick. Repeat the same process with the remaining two tortillas.

Mini tortilla cinnamon rolls in baking pan.

Bake. Place the pinwheels on a parchment paper-lined baking sheet or pan and bake at 338°F (170°C) for 7-8 minutes, just until they achieve a light golden brown color. Be cautious not to overbake to prevent unrolling and maintaining their shape.

Sweet dessert tortilla roll up drizzled with melted chocolate.

Drizzle with melted chocolate. Once out of the oven, enhance the sweetness by drizzling with melted chocolate or chocolate syrup. Melt chocolate with coconut oil by combining them in a microwave-safe bowl or on a stovetop using low heat. Stir until smooth. Serve these mini cinnamon rolls with chopped fresh fruit or a scoop of ice cream. Enjoy!

Hint: Choose tortillas that are fresh and flexible for your cinnamon rolls to make the rolling process effortless and achieve a soft and tender texture.

    Substitutions

    • Flour Tortillas - Use whole wheat tortillas or gluten-free tortillas for a different flavor or dietary preference.
    • Vegan Cream Cheese - replace it with unsweetened dairy-free yogurt, melted butter, or nut-based spread like peanut or cashew butter.
    • Brown Sugar - Substitute with any granular sweetener such as white sugar or coconut sugar. For those following a low-carb diet, erythritol, xylitol, or stevia are excellent alternatives.

    Variations

    • Nutty Crunch - Sprinkle chopped nuts like pecans or walnuts on top of the cinnamon-sugar layer for added crunch and flavor.
    • Healthy Vanilla Icing - Mix a bit of icing sugar with non-dairy Greek yogurt, and add a splash of vanilla extract.
    • Choco Drizzle Twist- Drizzle melted chocolate after baking or add chocolate chips before rolling for a delightful chocolatey twist.
    • Greek Yogurt Glaze - Combine vegan Greek yogurt with a touch of maple syrup or agave nectar for a creamy and tangy glaze.
    • Nut Butter Frosting - Blend almond or peanut butter with a splash of almond milk and a hint of sweetness for a nutty, wholesome frosting.
    • Protein Powder Glaze - Mix plant-based protein powder with a small amount of water or nut milk to create a protein-packed glaze.
    • Spice Swirls - Infuse warmth into your tortilla bites by incorporating aromatic spices like nutmeg, cloves, or cardamom in addition to cinnamon for a delightful and spicy twist.
    • Choco-Spice Swirls - add cocoa powder to create a delightful fusion of rich chocolatey goodness and warm spices in every bite.

These tasted great. Use large tortillas. I only had small. The only issue I had was the cooking time. I think they were barely hot at that temp and time. Otherwise they were good.

Thank you so much, Becki, for trying my tortilla cinnamon rolls and sharing your feedback! I’m glad to hear you enjoyed the taste. 😊 If you found they weren't quite hot enough, you can try baking them for 1-2 minutes longer. Just be careful not to overbake, as they can become hard and might unroll or lose their shape. I hope that helps, and I truly appreciate you taking the time to leave your comment!
