Savory Overnight Oats are a creamy, vegan, and simple recipe made with oats, yogurt, chia seeds, cucumber, and olives for a light yet hearty meal.
Perfect for easy breakfasts, quick dinners, or stress-free meal prep, they're incredibly satisfying and full of flavor.

Savory overnight oats began as a simple experiment when I was craving something savory, even though sweet overnight oats like hemp seed overnight oats, cinnamon banana oatmeal, and quinoa overnight oats are usually on repeat in my kitchen.
They were inspired by my taratur salad (often called liquid tzatziki) and its fresh, garlicky, yogurt-based flavor.
The result is a creamy, refreshing, and filling bowl that keeps me full without feeling heavy.
I love that it takes just minutes to prepare: mix everything, refrigerate overnight, and enjoy straight from the fridge.
Make a batch, enjoy every bite, and I hope it becomes a new favorite.

🥄How To Make Savory Overnight Oats

Mix the dry ingredients: In a bowl, mix rolled oats, chia seeds, sesame seeds, garlic powder, and salt.

Add the wet ingredients: Stir in the vegan Greek yogurt and plant milk until smooth and creamy.

Chill: Cover and refrigerate overnight. Top with chopped cucumber, sesame seeds, or hemp parmesan before serving.
📋Variations
- Herb boost: Stir in chopped fresh herbs like dill, parsley, or chives to make it fresher and more vibrant.
- Creamy twist: Mix in a spoonful of vegan cream cheese for extra creaminess.
- Umami flavor: Add a few chopped sun-dried tomatoes or roasted red peppers for depth.
- Nutty crunch: Sprinkle toasted sesame seeds, pumpkin seeds, or chopped walnuts on top.
- Cheesy style: Add a bit of nutritional yeast or hemp parmesan for a cheesy, savory flavor.
- Spicy edge: Add a pinch of chili flakes, smoked paprika, or a drizzle of hot sauce.

💡Marinela's Tips
- Toast your sesame seeds: Heat them in a dry skillet over medium heat for a few minutes, stirring until golden and fragrant. Pre-toasted seeds work too.
- Dice the cucumber small: The finer the pieces, the easier it is to mix in and enjoy with each spoonful.
- Adjust consistency: Depending on how thick your yogurt is, you can stir in a little extra plant milk in the morning to reach your preferred texture.
