The watermelon lime mint slushie is one of my favorite ways to enjoy my all-time favorite summer fruit: watermelon!
I enjoy it almost daily, whether sliced, tossed into a watermelon cucumber mint salad, or blended into smoothies like my watermelon banana smoothie or pineapple watermelon smoothie.
So, of course, turning it into a slushie was the next delicious step.
I love how the lime and mint add a fresh zing, and a touch of maple syrup adds a hint of natural sweetness if you like it a bit sweeter.
It's a simple, naturally sweet vegan treat that always hits the spot!
