How To Make Chickpea Flour Crackers
Mix dry ingredients. Preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper. In a medium bowl, whisk together the chickpea flour, nutritional yeast, and salt.
Form the dough. Mix in olive oil and gradually add water, stirring until a smooth and stiff dough forms. The dough should not be sticky. If it feels too wet, add a touch more chickpea flour.
Cut the dough. Dust a clean surface with chickpea flour and roll the dough into a large rectangle, aiming for a thickness of about ⅛ inch (or slightly thinner for extra crispiness). If the dough is sticky, dust it and your rolling pin with more chickpea flour as needed. Use a pizza cutter or knife to create bite-sized squares or rectangles (I cut 80 crackers).
Brush & season (optional). Brush off excess flour with a damp brush before baking for a cleaner look. Optionally, sprinkle with coarse sea salt for extra flavor.
Bake. Gently transfer the cut cracker squares or rectangles onto your prepared baking sheet. Bake in the preheated oven for 10-12 minutes or until golden brown and crisp. Watch them closely towards the end to avoid burning! Let them cool completely and serve with your favorite hummus or dip.
Storage
Let the crackers cool completely, then store them in an airtight container at room temperature for up to a week.
