High-Protein Chickpea Flour Crackers are a crunchy, savory snack you'll want to make on repeat.

They're vegan, gluten-free, and loaded with plant-based protein, with a bold cheesy taste thanks to nutritional yeast.

Pair them with hummus, vegan tuna salad, or any dip you love for a filling bite.

Love crunchy snacks? Try my oil-free red lentil crackers or linseed crackers next.

High-protein chickpea flour crackers (vegan and gluten-free).

These chickpea flour crackers are incredibly easy to make and a great way to enjoy a savory, homemade snack with simple pantry ingredients. Just like my crispy multiseed crackers, this is an unleavened recipe-no baking soda or baking powder needed.

After testing this recipe a few times, I found the perfect balance for a crisp, satisfying bite.

If you love cooking with chickpea flour, you might also love my chickpea flour omelet, vegan scrambled eggs, or dairy-free chickpea flour frittata next.

They're great for prepping ahead and require minimal effort, which I always appreciate. I like to make a batch and keep them on hand for easy snacking during the week.

They're also a budget-friendly alternative to packaged crackers. For extra texture, try adding seeds to make your own gram flour seed crackers.

    📋Ingredients

Ingredients for chickpea flour crackers with nutritional yeast.
    • Chickpea flour (garbanzo bean flour): The base of these crackers, giving them structure and a satisfying, hearty texture.
    • Nutritional yeast: Brings a rich, cheesy flavor without using dairy.
    • Olive oil: Adds a smooth texture and helps create that crisp finish. You can use any neutral vegetable oil you like.
    • Water: Helps bring everything together into a workable dough.
    • Salt: Balances and enhances all the flavors.

As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.

🔪How To Make Chickpea Flour Crackers

Dry ingredients for gluten-free chickpea flour crackers.

Mix dry ingredients. Preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper. In a medium bowl, whisk together the chickpea flour, nutritional yeast, and salt.

    Garbanzo bean crackers dough.

Form the dough. Mix in the olive oil and gradually add water, stirring until a smooth, stiff dough forms. The dough should not be sticky. If it feels too wet, add a touch more chickpea flour.

    Vegan gram flour crackers.

Cut the dough. Dust a clean surface with chickpea flour and roll the dough into a large rectangle, aiming for a thickness of about ⅛ inch (or slightly thinner for extra crispiness). If the dough is sticky, dust it and your rolling pin with more chickpea flour as needed. Use a pizza cutter or a knife to cut into bite-sized squares or rectangles (I cut 80 crackers).

    Vegan chickpea flour crackers preparation.

Brush & season (optional). Brush off excess flour with a damp brush before baking for a cleaner look. Optionally, sprinkle with coarse sea salt for extra flavor.

Bake. Carefully transfer the cut cracker squares or rectangles to your prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until golden and crisp. Keep an eye on them during the last few minutes to prevent overbaking. Let the crackers cool completely, then serve with your favorite hummus or dip.

    💡Marinela's Tips

    • Roll the dough evenly: Thinner dough gives extra crisp crackers, while slightly thicker dough results in a more hearty bite.
    • Let them cool completely: They will continue to crisp up as they cool, so don't worry if they feel a little soft right out of the oven.
    • Add seeds for extra crunch: Mix in sesame seeds, sunflower seeds, or flax seeds for extra texture and flavor.
    • Boost the flavor with herbs: Add dried herbs like rosemary, thyme, or oregano directly into the dough for a fragrant, savory twist.

    ❓Frequently Asked Questions (FAQ's)

Why are my chickpea flour crackers not crispy?

They may need a little more baking time or a thinner roll. Also, make sure to let them cool completely, as they crisp up more after coming out of the oven.

Can I make these crackers oil-free?

Yes, you can skip the oil, but the texture will be slightly less crisp and drier. Adding a little oil helps create that golden, crunchy finish.

    Are garbanzo flour crackers gluten-free?

Yes, chickpea flour is naturally gluten-free, making these crackers a great option for gluten-free snacking.

How do I store these crackers?

Store in an airtight container at room temperature for up to a week, keeping them sealed and away from moisture to maintain crispness.
