Mix dry ingredients. Preheat the oven to 350°F (180°C) and line a large baking sheet with parchment paper. In a medium bowl, whisk together the chickpea flour, nutritional yeast, and salt.

If the dough is sticky, dust it and your rolling pin with more chickpea flour as needed. Use a pizza cutter or a knife to cut into bite-sized squares or rectangles (I cut 80 crackers).

Brush & season (optional). Brush off excess flour with a damp brush before baking for a cleaner look. Optionally, sprinkle with coarse sea salt for extra flavor.

Bake. Carefully transfer the cut cracker squares or rectangles to your prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until golden and crisp. Keep an eye on them during the last few minutes to prevent overbaking. Let the crackers cool completely, then serve with your favorite hummus or dip.
