When I spot the first ripe and juicy strawberries at the local farmer's market I know it's time to enjoy yummy strawberry recipes like my hearty Strawberry Salad or these Chocolate Muffins.

Also, I included the best topping ideas like crunchy granola, superfood seeds, and peanut butter to transform it into a filling plant-based meal.

It really is a perfect replacement for ice cream or sorbet!

    Ingredients

You need only 2 ingredients to make this banana-free strawberry breakfast bowl recipe. All you need is:

Frozen strawberries and coconut milk on white marbe table
    • Frozen strawberries
    • Plant-based milk of choice (I used coconut milk but almond milk, or oat milk are a great option, as well)

As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.

    Instructions

Brozen strawberries and dairy-free coconut milk in a blender cup

Combine. Add frozen strawberries and coconut milk in a high-speed blender or food processor.

Blend. Blend the ingredients together, scraping down the sides as needed. If the mixture is too thick, add extra non-dairy milk.

Serve. Scoop the mixture into a bowl and top with your favorite toppings. I prefer granola, chia seeds, and peanut butter (cashew butter would be great, too).

Serve immediately for the best taste and texture. However, if you want to prep ahead or have any leftovers, keep them in the freezer in a freezer-friendly bag for up to 2 months.

Mix-ins and Toppings for Smoothie Bowl

Be creative! Here are some toppings ideas to create the most amazing smoothie bowl that will satisfy your taste buds:

    • Crunchy Homemade Granola or muesli
    • Chopped fruits of choice (fresh or frozen)
    • Nut butter (I like using peanut butter, cashew butter, or almond butter)
    • Coconut flakes
    • Seeds (chia seeds, hemp seeds, ground flax seeds, or pepitas)
    • Nuts (hazelnuts, almonds, pecans, walnuts, pistachios)
    • Dried fruit (cranberries, dates, raisins, apricots, or goji berries)
    • A scoop of coconut cream
    • Chocolate chips or cacao nibs
    • Vegan Greek yogurt
    • Vegan protein powder
    • A drizzle of pure maple syrup, agave nectar, or date syrup for sweetness

    Substitutions

    • For a richer smoothie bowl replace milk with coconut cream or vegan yogurt.
    • This smoothie bowl is not overly sweet since it is relying on strawberries for sweetness. If your strawberries aren't quite as sweet as you like them to be, add a tablespoon of maple syrup or agave nectar to make it pleasantly sweet as it suits your taste. Alternatively, you can blend in a frozen banana for creaminess and sweetness.
    • Blend in your favorite oats, nuts, seeds, or vegan protein powder to add thickness and nutrition.

    Equipment

You will need a high powdered blender or food processor to make this smoothie bowl.

    Storage

I recommend you enjoy your smoothie bowl as soon as you make it but you can freeze it in freezer-friendly bags for up to 2 months. Add your toppings right before serving.

You can store it in the fridge but it will melt and become watery and drinkable.

    Top tips

    1. Use only frozen strawberries. This will give you that rich and thick texture.
    2. Don't add too much liquid. Please be patient, it may take longer to blend but don't be tempted to pour out more milk. The extra liquid will make your smoothie bowl thin and runny.
    3. Push frozen strawberries into the blade. Use your temper or stop or scrape the sides of your blender cup if you are using a regular blender. Blend again.
    4. Don't over-blend. Stop blending at the point where there are no frozen chunks of strawberries remaining.
    5. Invest in a high-quality blender. This will make a big difference in achieving that nice ice-creamy like texture. If you have a regular blender that is having trouble processing frozen strawberries simply add a little more liquid, one tablespoon at a time.
    6. Prep ahead your toppings. Thus you can immediately top and serve your smoothie bowl once you have finished blending it.
