Vegan silken tofu mayonnaise was one of those recipes that totally surprised me because I did not expect something so simple to taste this much like regular mayo.
After trying it, I realized I do not miss the traditional version at all-this one is smooth, creamy, silky, and ready in less than 5 minutes. I also love that it is packed with protein and made without any oil, so I can enjoy it as often as I want.
I use it all the time in sandwiches, spoon it over my eggless latkes, stir it into potato salads, and enjoy it with red lentil tofu whenever I want something easy and tasty.

- Silken firm tofu: I used Mori-Nu Silken Firm Tofu for the smoothest, creamiest texture. Make sure to use silken firm tofu rather than regular firm tofu for a true mayo-like consistency.

Step 1: Add the silken firm tofu, apple cider vinegar, lemon juice, mustard, garlic powder, and sea salt to a blender or food processor.

Step 2: Blend until completely smooth and creamy, scraping down the sides if needed. Taste and adjust the salt, lemon juice, or vinegar to your liking.
