Banana Peanut Butter Baked Oatmeal is a vegan, dairy-free, egg-free recipe that’s hearty, filling, and naturally refined sugar-free. Perfect for a cozy breakfast or wholesome dessert, it’s quick, easy, and delicious hot or cold.
Preheat oven to 350°F / 180°C and grease an 8-inch square baking pan. Mash the bananas in a bowl. Add milk, peanut butter, maple syrup, and vanilla to the bananas. Mix until smooth.
2 cups bananas, ¾ cups oat milk, ¼ cup natural peanut butter, ¼ cup pure maple syrup, 1 teaspoon pure vanilla extract
In another bowl, combine oats, walnuts, flaxseed, cinnamon, nutmeg, baking soda, and salt.

Stir the dry ingredients into the wet mixture until just combined. Pour into the prepared pan.

Notes
Sweetness tip: The sweetness depends on the bananas, so use ripe or overripe ones for the best flavor. This baked oatmeal isn’t overly sweet. Add 1–2 extra tablespoons of maple syrup if you prefer it sweeter.
Nut-free option: You can omit the walnuts entirely for a nut-free vegan version.
Storage: Keep in an airtight container in the fridge for up to 4 days, or freeze slices for up to 3 months.
