These No-Bake Chocolate Protein Oatmeal Cookies are an easy, vegan, and gluten-free treat that’s perfect for breakfast, snack, or dessert. Made with no flour and simple ingredients like oats, peanut butter, and chocolate protein powder, they come together in minutes for a wholesome, delicious bite.
In a bowl, mix all the dry ingredients until well combined.
½ cup chocolate protein powder, 1 cup rolled oats, 3 tablespoons unsweetened cocoa powder, ¼ teaspoon salt
Add in the wet ingredients and stir until a thick, sticky dough forms.
⅓ cup natural peanut butter, ¼ cup pure maple syrup, ½ cup unsweetened almond milk, 1 teaspoon vanilla extract
Scoop about 2 tablespoons of dough for each cookie, shape into rounds, and place on a tray. Optional: drizzle with melted dark chocolate on top and refrigerate for 30 minutes to set before enjoying.
Notes
Swap peanut butter for almond, cashew, or sunflower seed butter.
Maple syrup can be replaced with agave, coconut nectar, or brown rice syrup.
If the dough is too dry, add plant milk 1 tablespoon at a time.
Store in an airtight container in the fridge up to a week or freeze for longer.
