This Vegan Sweet Potato Bread is a soft, moist loaf made with sweet potato, warm spices, and crunchy walnuts. It’s an easy egg-free and dairy-free recipe that’s lightly sweet and perfect for breakfast, a snack, or a cozy dessert.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
1 + ½ cups whole wheat flour, ½ cup cane sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, 1 teaspoon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, ¼ teaspoon sea salt
Add the sweet potato purée, plant-based milk, sunflower oil, and vinegar. Stir gently until just combined. Do not overmix.

Fold in the finely chopped walnuts until evenly distributed throughout the batter.

Preheat the oven to 350°F (180°C). Pour the batter into a parchment-lined 9×5-inch loaf pan and sprinkle with extra chopped walnuts, if desired. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack and cool completely before slicing.
