This vegan cornbread is a moist, soft, and easy one-bowl recipe made with simple pantry ingredients and ready in just 30 minutes. Lightly sweet with a delicious corn flavor, it’s the perfect no-egg homemade bread for breakfast, a snack, or alongside your favorite meal.
Add the cornmeal, flour, brown sugar, baking soda, and salt to a large bowl. Whisk until well combined.
1 + ⅓ cups cornmeal, 1 cup all-purpose flour, ¼ cup brown sugar, 1 teaspoon baking soda, ½ teaspoon sea salt
Pour in the plant milk, olive oil, and vinegar. Stir gently until just combined and you have a smooth batter. Don't overmix.
