This crispy oven roasted chickpeas snack is a crunchy, protein-packed vegan treat made with just a few simple ingredients. Baked to golden perfection, these seasoned chickpeas are the perfect flavorful snack or salad topper.
Rinse and drain your chickpeas well. Pat them dry with a kitchen towel or paper towels, removing any loose skins.
Line a baking sheet with parchment paper. Spread chickpeas in a single layer and place them in a cold oven. Turn the oven to 390°F (200°C) and let them pre-dry for 3–5 minutes while the oven heats.
Once preheated, roast the chickpeas for 25 minutes. Shake the pan or stir halfway through for even roasting.
Remove the pan, drizzle with olive oil, and toss with salt and spices. Mix well, then return to the oven and bake for another 15 minutes or until golden and crispy. Add 5–10 extra minutes if needed, depending on your oven.
Notes
For extra crispy chickpeas, don’t skip the pre-drying step in the oven before adding oil or spices.
You can make these completely oil-free, but a little oil helps spices stick and enhances crispiness.
Customize the seasonings to your taste: try smoked paprika, Italian herbs, or even cinnamon and maple for a sweet twist.
Store cooled chickpeas in a bowl lightly covered with paper towel at room temperature for up to 3 days.
