Vegan TVP Spaghetti Bolognese is a hearty, high-protein plant-based pasta made with TVP, vegetables, and a rich tomato sauce for a satisfying meal. This easy, lentil-free bolognese is perfect for a quick weeknight dinner, meal prep, or a comforting lunch.
Cook the spaghetti according to the package instructions until al dente.

While the pasta cooks, heat the olive oil in a large pot over medium heat. Add the onion and carrots and cook for 4-5 minutes, until softened. Add the garlic, tomato paste, oregano, basil, smoked paprika, and black pepper. Cook for 1 minute, until fragrant.

Stir in the finely diced eggplant and cook for another 5 minutes, stirring occasionally, until it begins to soften. Add a splash of broth or water if needed to prevent the vegetables from sticking to the pot.

Add the TVP, tomato sauce, vegetable broth, and salt. Bring to a boil, then reduce the heat and simmer partially covered for 15 minutes, stirring frequently. During the last 1–2 minutes, stir in the nutritional yeast and chopped parsley.

Add the cooked spaghetti to the sauce and toss until evenly coated. If the sauce is too thick, add a splash of vegetable broth or water. Serve warm with vegan Parmesan and extra fresh parsley, if desired.
