Instructions
In a bowl, mix chickpea egg ingredients. Whisk until smooth with no lumps, then let it rest while you prep the veggies.
¼ cup chickpea flour, 1 tablespoon nutritional yeast, ¼ teaspoon kala namak salt (black salt), ¼ teaspoon onion powder, ⅛ teaspoon garlic powder, ⅛ teaspoon turmeric powder, ⅓ cup water
Heat olive oil in a non-stick pan. Sauté mushrooms until soft (3-4 minutes), seasoning with salt and pepper. Add spinach at the end and cook until wilted.

Stir the cooked veggies into the chickpea batter gently.
Heat the pan again with olive oil on medium heat. Pour in the batter, spread it out evenly, and cook for 5 minutes. Flip carefully and cook another 5 minutes until golden and cooked through.

Slide the omelette onto a plate, top with extra sautéed veggies, grated vegan cheese, and a pinch of red pepper flakes.
