These No-Bake Chocolate Date Nut Bars are a vegan treat you can make anytime. Easy, quick, and naturally sweet, they work as a filling snack or a decadent dessert.
1 8-inch square baking pan lined with parchment paper
Ingredients
1cupdatespitted
1cupmixed nuts
1tablespooncocoa powderunsweetened
1teaspoonvanilla extract

Choccolate Topping
3.5oz (100 gr)vegan dark chocolate
1teaspoonrefined coconut oil
Instructions
Add the nuts to a blender or food processor and pulse until finely ground but not completely powdered.

Add the dates, cocoa powder, vanilla, and salt, then process until the mixture is sticky and well combined.

Transfer the mixture to an 8-inch square baking pan lined with parchment paper. Press it down firmly with a spatula or your hands to form a smooth, even layer.
3.5 oz (100 gr) vegan dark chocolate, 1 teaspoon refined coconut oil
Melt the dark chocolate with coconut oil using a double boiler or microwave. Spread it evenly over the mixture and refrigerate for at least 1 hour.
Slice into bars, sprinkle with flaky sea salt, and enjoy.
Notes
If your dates are dry, soak them in warm water for 10 minutes, then drain well before blending.
Press mixture firmly in the pan so bars hold together.
Chill long enough before slicing for clean cuts.
These bars store well in an airtight container in the fridge for up to 1 week.
