This High-Protein Red Lentil Pasta is a vegan, dairy-free recipe made with simple ingredients for a hearty, flavorful, and protein-packed meal. With a rich tomato lentil sauce and comforting pasta texture, this easy recipe is perfect for lunch, dinner, or meal prep.
Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Drain and set aside.

While the pasta cooks, heat olive oil in a large pan over medium heat. Add the onion and carrots and cook for 7–8 minutes until softened. Add the garlic, oregano, basil, smoked paprika, and black pepper, and cook for 1 minute until fragrant.

Add the tomato puree, diced tomatoes, vegetable broth, red lentils, and salt. Stir well and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes, stirring frequently, until the lentils are tender and the sauce is thick and creamy.

Stir in the nutritional yeast and spinach during the last 2 minutes of cooking. Cook until the spinach wilts, then adjust seasoning if needed.

Add the cooked pasta to the sauce and toss until well coated. Serve warm with vegan Parmesan, a squeeze of fresh lemon juice, and chopped parsley.

Pasta choice: Any pasta shape works well in this recipe. Use gluten-free pasta for a gluten-free version.
