Equipment

  • Blender or food processor

Ingredients

  • 2 cups fresh flat-leaf parsley chopped
  • 1 avocado peeled
  • 3 stalks green garlic chopped
  • 2 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil extra virgin
  • ½ cup fresh water
  • Salt, ground black pepper, paprika flakes per taste

Instructions

  • First, gather all ingredients. Wash your parsley thoroughly under clean, running water. Do the same with the avocado, spring garlic, and lemon. Gently squeeze the lemon and take 2 tablespoon of the juice. Next, combine all ingredients in a blender or food processor. Blend until smooth and creamy.  Try it and season it with more salt per taste if needed. So simple!
  • Serve your uncooked fresh parsley avocado sauce immediately or store it in the fridge for up to 1-2 days. You can put your homemade dipping sauce on pretty much everything. Use it to enhance the flavor of your pasta dishes, or roasted veggies like potatoes, broccoli, carrots, or brussels sprouts. Also, you can coat your leafy green salads, use it as a topping for pizza or a spread for sandwiches.

Notes

For this recipe, you must use fresh parsley. Dried parsley won't work.
