Ingredients
  

  • 1 cup rolled oats gluten-free
  • 2 cups fresh spinach
  • 1 banana ripe
  • 2 flex eggs ground flax meal and water
  • cup olive oil extra virgin
  • cup maple syrup
  • ¼ cup agave syrup
  • ¼ cup fresh water
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup raspberries frozen or fresh, for decoration

Instructions
 

  • To make these vegan muffins, first, start with blending the oats and turning them into nice oat flour. Next, add wet ingredients: water, oil, maple and agave syrup, and flex eggs. Blend and stop to add the banana, spinach, cinnamon, and pinch of salt. Blend again until you get a batter with a smooth texture.
  • Next, spray the muffin pan with cooking spray or grease it with a silicone brush and pour out the batter in muffin holes. Bake in preheated oven at 200 C for 20-23minutes until they are lightly brown. This recipe yields 8 muffins. You can easily double or triple all the ingredients from this recipe if you need some extra pieces of these gluten-free vegan muffins.
  • Allow muffins to cool a few minutes in the pan, then carefully remove to a wire cooling rack. Decorate the muffins with raspberries. They will add a little bit of sour flavor and a pleasant aroma to the sweetness of the spinach banana muffins. Enjoy it for breakfast, dessert, or a healthy snack with your kids at home. These healthy green muffins are guaranteed to disappear in time, they are so moist and delicious!
