Easy oatmeal raisin cookies are the best quick & healthy treats without baking soda or baking powder. This is the ultimate vegan dessert without sugar, eggs, flour, butter, or dairy.
First, place the raisins in a bowl and cover them with hot tap water to soften them before folding them into the batter. Let them soak for 10-15 minutes or overnight to rehydrate and plump them up.
While raisins are soaking, finely chop up the hazelnuts. After that, preheat the oven to 338°F / 170°C. Line a large baking sheet with parchment paper.
Next, in a large bowl mix oats, coconut flakes, cacao powder, applesauce, maple syrup, and milk. Fold in drained raisins and chopped hazelnuts. Mix well until everything is combined.
Use a ¼ measuring cup to scoop the batter and drop it onto a prepared baking sheet. The cookies won't spread so, use your fingers to flatten them slightly and give them some shape.Bake for 10 minutes. Transfer your raisin cookies on a wire rack and let them cool before serving
Now, your chewy raisin cookies are ready to be devoured. Enjoy them with a cup of tea, coffee, or a non-dairy hot chocolate (my fav). You can keep them in an airtight container, at room temperature for 2-3 days. Or store them up to a week, refrigerated, in a sealed container. Store cooled cookies in a freezer-friendly container in the freezer for up to a month.

You can substitute applesauce with the same amount of mashed banana
Use chopped almonds, walnuts, or pecans instead of hazelnut. You can omit hazelnuts for a nut-free version
If your batter is too dry add a spoonful of milk at a time to make it easily manageable to form cookies
