Ingredients
  

  • 2 bananas ripe, mashed
  • 1 apple, Red Delicious, or any sweet apple grated, approximately ¾ cup
  • 1 ½ cup old fashioned rolled oats
  • cup raw pumpkin seeds
  • 1 flax egg 1 tablespoon flax meal + 3 tablespoon water
  • 1 teaspoon ground cinnamon

Instructions
 

  • First, prepare your flax egg (mix 1 tablespoon of flax meal with 3 tablespoons water). In the meantime, preheat the oven to 356°F / 180°C. Line a large baking sheet with parchment paper. In a bowl, mash the bananas. Add the flax egg and cinnamon. Mix it well.
  • Next, add grated apple, rolled oats, and pumpkin seeds. Mix again until everything is combined.
  • Use a ¼ measuring cup to scoop the batter and drop it onto a prepared baking sheet. Use your fingers to flatten it slightly. Bake for 20 minutes. Transfer your cookies to a wire rack and let them cool for at least 10 minutes.
  • Now, your soft breakfast cookies are ready to be devoured. Enjoy them with a cup of tea, coffee, or a glass of non-dairy milk. You could spread them with creamy peanut butter (awesome combo!). Keep them for 2-3 days, refrigerated, in a sealed container. Store cooled cookies in a freezer-friendly container in the freezer for up to a month.

Notes

  • For this recipe, I used Red Delicious. Because the sweetness for these apple cookies will come only from bananas and apple, it's important to use sweet or semi-sweet apple like Gala, Fuji, Golden Delicious, Honeycrisp apple.
  • Peeling of the apples is totally optional. I didn't peel it. Unpeeled apple will add texture and color to your cookies. And more fibre as well!
  • Instead of pumpkin seeds, you can add sunflower seeds, chopped walnuts, almonds, or hazelnuts.
