1 ½cupspelt flourplus more for dusting the pan (you can use all-purpose flour or gluten free flour as well)
½cupraw walnutsfinely chopped
1flax egg1 tablespoon flax meal + 3 tablespoon water
½cup+ 3 tablespoon sprinkling water
⅓cupsunflower oilplus more for greasing the pan
⅓cupmaple syrupuse agave syrup instead
1teaspoonpure vanilla extract
2teaspoonground cinnamon
2teaspoonbaking powder
1teaspoonbaking soda
½teaspoonsalt
1-2tablespoonunrefined brown sugarfor topping (optional)
Instructions
First, peel, core, and cut the apples into small pieces. Prepare your flax egg (1 tablespoon flaxseed meal + 3 tablespoon water).
On a wooden board, chop the raw walnuts.
Meanwhile, preheat the oven to 400°F / 200°C. Lightly grease round baking pan. Dust it with a tablespoon or two of flour, turn the pan upside down and tap gently to remove any unnecessary flour.
Next, in a big bowl, combine spelt flour, ground cinnamon, baking powder, and baking soda. With a wooden spoon, mix it well together. Add chopped apples and walnuts. Gently toss everything together.
After that, in another bowl, with a fork mash well bananas. Add flax egg, maple syrup, sunflower oil, sprinkling water, and vanilla extract. Stir briefly to combine.
Finally, add wet ingredients into the bowl with dry ingredients and gently mix everything together. Be very careful not to overmix the batter. Otherwise, your cake would be thick and dense. Transfer the batter into the prepared pan. Sprinkle unrefined brown sugar on top for a golden crunchy crust if you like. This is totally optional. Bake for 35 minutes at 400°F / 200°C or until inserted toothpick or a skewer in the middle comes out clean.
Transfer to a wire rack and let it cool slightly before slicing. Serve warm or cold, with a cup of tea or coffee and peanut butter (this combo is fantastic!). Drizzle with some maple or agave syrup if you like (for additional sweetness because this cake is sweet but not overly sweet).
Notes
I used Granny Smit apples but you can use any type of apples you have at home.
Thinly slice the apples if you don't prefer big chinks in the cake's texture.
Use gluten-free flour if you have gluten intolerances.
Omit the walnuts for a nut-free cake version.
Drizzle with additional maple syrup or agave syrup before serving for extra sweetness. Also, you can dust the cake with powdered sugar after cooling.
