Ingredients
  

  • 1 medium-sized head butter lettuce bite-size chopped
  • 3 radishes thinly sliced
  • 1 cucumber thinly sliced
  • 3 stalks green onions finely chopped

Dressing

  • 2 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon apple cider vinegar
  • salt to taste

Instructions
 

  • First, rinse well all vegetables. Next, in a medium-sized bowl mix bite-sized chopped butter lettuce and thinly sliced radishes, spring onions, and cucumber
  • Drizzle with lemon vinaigrette: extra virgin olive oil, freshly squeezed lemon juice, apple cider vinegar, and salt to taste. Toss gently until salad is evenly coated. Serve it as a side dish with your lunch or dinner or simply enjoy it as a light meal on its own!
