Who knew parsley could be so delicious? I've always been a fan of this amazing herb, and this green parsley smoothie is the perfect way to enjoy its fresh, vibrant flavor.

A little secret: I've been eating parsley plain since I was a kid. Straight from my grandparents' garden! Even today, my sister can't believe I do it.

But don't worry-I created this recipe to balance parsley's flavor perfectly with the tropical sweetness of pineapple and apple, the crisp freshness of cucumber, the creamy richness of avocado, and a bright splash of lemon juice.

Made with just water and no banana needed, this vegan, plant-based, dairy-free smoothie is low in calories, packed with nutrients, and an easy, delicious way to enjoy a healthy daily treat!

    Ingredients and Substitutions

Plant-based ingredients for green parsley smoothie.
    • Parsley: Use fresh parsley, removing large stems but keeping smaller ones.
    • Pineapple: I used frozen pineapple for the chilled smoothie, but fresh works well, too. You can also substitute mango or orange.
    • Cucumber: Crisp and hydrating, swap it for celery if you like.
    • Avocado: Use a ripe, creamy avocado for the best texture.
    • Apple: Adds natural sweetness. Use your favorite apple variety, such as Granny Smith or Honeycrisp.
    • Lemon juice: Use fresh lemon juice for a bright, tangy flavor.
    • Water: Use water as a liquid base, or replace it with coconut water or almond milk.

As always, you can find the full recipe with a list of ingredients with measurements in a printable recipe card at the end of this post.
